Crock Pot Beef & Broccoli

Beef. Broccoli. Sauce. What more does one need in life? A personal chef you say? Well, I can’t give you that but I can say that the next best thing is a crock pot/slow cooker. Come home from work, dinner is made and it’s like your personal chef has been slaving over a hot stove all afternoon. I really just like the simplicity of this recipe. All of the ingredients are basic and are certainly pantry staples in my house. This recipe has a nice flavor, not spicy, not sweet, not salty. Just delicious. Your kids will probably like it too!

Crockpot Beef & Broccoli (4)


INGREDIENTS
1 lb Beef – Sliced into strips
1 cup Beef or Vegetable Stock
1/2 cup Bragg’s or Soy Sauce
1/3 cup Brown Sugar
3 cloves Garlic
1 tbsp Sesame Oil
1/2 tsp Cayenne *Optional
2 tbsp Arrowroot Powder or Cornstarch
2-3 cups Broccoli flowerets

METHOD
– Slice beef into strips and put in the bottom of the crock pot and turn to low.
– In small bowl whisk together the stock, soy sauce, brown sugar, garlic and sesame oil and pour over beef. Cook on low 6-8 hours or on high 3-4 hours.
– Remove 2-3 tbsp of hot fluid from crock pot, whisk with arrowroot powder and put back in crock pot. Turn to high if it isn’t already.
– Add broccoli and cook for another 30-45 minutes or until sauce has thickened.
– Serve over quinoa or rice.

NOTES
– You can use stewing beef to save yourself some time slicing or you can slice up a sirloin steak.
