Goat Cheese & Pistachio Stuffed Dates

I had a little dinner party the other night. The basic idea was that the ladies would have a peek at the blog and tell me what they want me to make. Well that didn’t happen. Mostly (I like to believe) because they’re all indecisive. So I scrambled the night before to find a couple recipes that would suit everyone. I found this and the next posting (Pumpkin Spice Cookies) This is the quickest, most scrumptious little appetizer ever and I’m pretty sure everyone was happy with it. You don’t get a lot for 7 points but they are SO worth it. There is no cooking necessary so it is an appetizer recipe that allows you to create something great, in a short period of time and still focus on the important part (besides dinner!) … Hosting!

4 oz Goat Cheese
4 tbsp Pistachios – Deshelled and Crushed
1 tbsp Chives – Finely chopped
1 tsp Honey or Agave
8 large Dates – Halved and Pitted **SEE NOTES

– Combine first 4 ingredients in a bowl and mix until fully combined. It might make it easier to mix the cheese and honey if you microwave it for 15 seconds first.
– Halve and pit the dates and stuff each with the goat cheese mixture.
– Serve! (Yeah – it’s that easy)

– The large Medjool Dates that this recipe called for are really expensive. I bought a cheap Dan-D Pak of smaller dates from the market. Just slice off one third of the small date and pull open with your finger tips then stuff. Takes a bit more time but is about $13 cheaper!! That and you can fill more dates and serve more people.
