Fiesta Lime Chicken

This isn’t really recipe theft. Or even borrowing. I bought a spice mix pack and didn’t realize at the time that it required other ingredients. Happy I had everything on hand because this chicken is delicious and utterly simple. I don’t have a barbeque but I can guarantee that throwing these little morsels on the bbq would be a win. After reading the ingredients, I had a hard time buying the packet again – especially since I have everything at home. It’s just as easy to throw these spices together as it is to open the packaging. I have a tendency to double the recipe and freeze half so that I have a yummy marinated chicken dish ready for the oven if I decide I’m too lazy to cook.

1 tsp Garlic – Minced
1 tsp Onion – Minced – Fresh or Dried
3/4 tsp Cumin – Ground
3/4 tsp Oregano
1/2 tsp Cilantro – Fresh or Dried *Optional
1/2 tsp Black Pepper – Coarse Grind
3 tbsp Lime Juice
1 tbsp Orange Juice
1 tbsp Honey or Agave
2 tbsp Olive Oil
1/2 tsp Salt
4 Chicken Breast – Boneless Skinless

– In sealable bag put all ingredients except chicken and squish bag around until honey is incorporated
– Add chicken breast to bag, one at a time smother in mixture **SEE NOTES
– Put chicken in large saucepan over medium-high heat, cover in left over sauce. Cook 5-7 minutes per side or until cooked through
– Serve

– If you choose, coat chicken in a bag, then put in sealable container in fridge to marinate. Top with remainder of sauce for extra soakage.
– I cut each chicken breast in half to make a 4oz serving per person (recommended protein serving) they cook faster this way too, even if you eat more than 4oz.
